Since the original admin app will no longer be supported I’m wondering if there is a known community-built replacement for it.

I don’t know of one. I think Activiti and Camunda both have something based on https://bpmn.io/
Will the old app continue to work with previous versions of Flowable?

The v6 admin app is there and if the Angular v1 technology is not an issue it will still continue to work with v6.x versions.
