I got some old process instances with version 5. I’d like to just delete, cancel them but at first I have to enable compatibility mode ?
Is it safe to just enable it, delete instances and disable ??

Yes you’ll need to enable compatibility mode in order to be able to delete them. Once they are deleted you can safely disable the compatibility mode.
