With the flowable 5 explorer app it was possible to create subtasks for an assigned task. That feature is gone with the flowable 6 task app. What’s the reason for it? Creating subtasks through the Java API still seems to be possible.

The reason is simply time and priority! As you say, the API supports it. If you’re interested in contributing this feature, I’m happy to make suggestions on the user experience.
