I’m using the flowable/all-in-one image and I’m wondering if they’re being signed anywhere I can check.

no currently they are not signed.
This is planned for a future release though. (also providing provenance files for the Helm chart)
If this is important for you please create an issue for it so that it doesn’t escape our attention.
